A new chef de cuisine at The Peacock, and a fall menu to go with him

Joshua Luce has joined The Peacock, the three-level dining and entertainment destination, as chef de cuisine, and has put out a fall menu.

Joshua Luce is the new chef de cuisine at The Peacock, the three-level dining and entertainment destination. He trained at the French Culinary Institute and cooked at Jean-Georges, Picholine, and Alain Ducasse at the St. Regis, then The Peninsula Beverly Hills. He was executive sous chef at the Ace Hotel in downtown Los Angeles and executive chef at Neighbor in Venice Beach, and he founded Gold Land BBQ on the California Central Coast. His fall menu adds blue crab and artichoke dip, roasted halibut with romesco, crispy Brussels sprouts with hot honey, and a roasted acorn squash dessert. Owner Michelle Van Jura said she built The Peacock so every floor would feel like an occasion, and that Luce still gets excited about a great crab dip. That is a nice hire for a local room.
